With so many in our family, potatoes seem to be present at many meals - they're tasty and filling. But eventually it gets boring having the same potatoes over and over again. While I was browsing Pinterest I found this recipe. The kids love it!
Preheat oven to 375, brush cookie sheet with bacon grease (or spray with non-stick cooking spray)
If you are leaving the peels on - wash and slice the potatoes; otherwise peel, rinse, and slice the potatoes. Let your tastes determine the thickness of the potatoes - but as a rule about 1/4" - 1/8"
Add potatoes to a large pot of water and bring to a rapid boil - cook for about 5 minutes
(do not cook them through or they will fall apart - red or yellow potatoes are firmer and work great for this recipe)
Drain potatoes and arrange in a single layer on the cookie sheet with rows slightly overlapping, lightly brush the potatoes with bacon grease (you can use vegetable or olive oil instead)
Sprinkle with cheddar cheese, add salt and pepper to taste
Bake for 15 minutes until potatoes are throughly cooked. Once they are cooked, place them under the broiler for about 2 minutes to get them golden and crispy
