Quick and easy meal to get on the table in less than 30 minutes! I absoutely love Spanish Rice and I really like the fact that it's versatile enough that I can serve it as a side dish or add meat to it and make a quick main dish meal.

- 1/2 cup diced onions
- 1/3 cup diced bell peppers you can use any color you wish
- 2 cups instant rice
- 2 cups hot water
- 2 - 8oz cans tomato sauce
- 1 tsp salt
- 1/4 tsp black pepper
- 1/8 tsp red pepper flakes your taste make like more or less - this is about what my kids will tolerate
- 3 cups cubed chicken breasts about 2 chicken breasts
- 1/4 cups bacon drippings (or oil) for frying
