Quick and easy meal to get on the table in less than 30 minutes! I absoutely love Spanish Rice and I really like the fact that it's versatile enough that I can serve it as a side dish or add meat to it and make a quick main dish meal.

Ingredients
  • 1/2 cup diced onions
  • 1/3 cup diced bell peppers you can use any color you wish
  • 2 cups instant rice
  • 2 cups hot water
  • 2 - 8oz cans tomato sauce
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1/8 tsp red pepper flakes your taste make like more or less - this is about what my kids will tolerate
  • 3 cups cubed chicken breasts about 2 chicken breasts
  • 1/4 cups bacon drippings (or oil) for frying
  • Course Main Dish

Recipe Notes

I like to serve this with butter toast that's been sprinkled with garlic powder. Tastes so yummy together!

About This Recipe

I found this recipe in my dad’s old recipe box when I “inherited” it from his house. (meaning I snuck it out of the house when he wasn’t looking!) Dad never made this recipe and I can’t remember if Grandma Buck ever did. Whether it’s an old family recipe or not, what I do know is that it is one of my favorites – not my kids though. This recipe doesn’t originally call for chicken or any other meat in it – but I like to add meat and turn it into a main dish meal.
