Ring Bologna, Sauerkraut, and Dumplings
Sauerkraut is one of those foods that if your family is any part German, you were going to be eating it. This dish can be made with various other meats you might like such as Kielbasa, Sausage, Hot Dogs, Bratwurts, etc.
  • 2pkgs ring bologna
  • 16oz sauerkrautI use sauerkraut in the bag, use whatever you prefer
  • 8oz waterYou may need more to have enough to cover the dumplings
Ingredients for Dumplings
  1. dump sauerkraut juice an all in a large pot, add water – place on the stove on med-high heat to boil
  2. cut ring bologna into serving size chunks – add to sauerkraut and continue to cook
  1. add all dumpling ingredients into a bowl and mix with a fork until just combined – don’t overmix or they’ll become tough
  2. drop dumplings by the tablespoon full into boiling sauerkraut and ring bologna water and cover with a lid and cook for 10 minutes. (no need to worry about being precise with the dumpling size)
  3. DON’T LIFT THE LID – Lifting the lid will cause the dumplings to fall and then they won’t be soft and fluffy. I have family who likes the way fallen dumplings taste and they frequently try to sneak into my kitchen to lift the lid so I guard the pot!
  4. after 10 minutes turn off heat, remove lid and ladle the dumplings, bologna, and sauerkraut into a serving dish. Once I have everything removed I drain the liquid in order to get the last remaining sauerkraut from the pan
